Principle of sterilization:
1、 Thermal effect:
When the food is in the microwave field, polar molecules rotate rapidly, and the molecules rub against each other to produce heat, thus killing bacterial propagules, molds and spores.
2、 Non thermal effect:
In the microwave field, nucleic acid and protein can mutate and promote the death of microorganisms, which constitutes the non thermal effect of microwave sterilization principle.
(1) Medical research has found that microwave can affect and interfere with DNA replication, transfer, synthesis and modification;
(2) Food science research found that the common enzymes in food are sensitive to microwave;
(3) From the point of view of cell biology, in microwave field, the cell membrane (or cell wall) can be mechanically damaged, which makes the material inside the cell leak out and affects its growth and reproduction.
The temperature produced by microwave sterilization only represents the amount of microwave absorbed by food, and is not completely sterilized by heat. Therefore, microwave sterilization does not need too high temperature, which can effectively maintain the sensory properties and nutritional value of products. That's what it's worth.
